Instant Pot Stuffed Peppers

Who knew it could be so EASY to make stuffed peppers in the Instant Pot!

The cook time is only 5 Minutes. Yes, you read that correctly: 5 MINUTES! Stuffed peppers are a great option for those on a lower carb diet. For #keto fans, just omit the rice.


  • 1 - 1 1/2 cups cooked rice

  • 1 egg

  • 5 medium or 4 large assorted bell peppers

  • 1 lb ground beef

  • 1 small diced onion

  • 1 Tablespoon minced garlic

  • 3 oz (1/2 can) tomato paste

  • 1 tsp smoked paprika

  • 1 tsp oregano

  • 1 tsp basil

  • 1/2 tsp sage

  • salt & pepper to taste

  • 3 tbsp Worcestershire sauce

  • 1 1/2cup water

  • ½ cup shredded mozzarella cheese


  1. Wash the peppers, remove the tops and remove seeds;

  2. Set the mozzarella cheese aside;

  3. In a mixing bowl, combine ground beef, cooked rice, and all other ingredients, except the mozzarella cheese;

  4. Stuff the bell peppers equally with the mixture;

5. Add a trivet or steamer basket to the Instant Pot;

6. Add 1 ½ cups of water and place the peppers onto the trivet/steamer basket;

7. Close the lid, lock in place, and turn the knob to sealing. Hit the manual or pressure cook button and set for 5 minutes. Allow a 5 minutes natural release when cook time is up;

8. Using the handles of the trivet or steamer basket, carefully remove the peppers from the pot;

9. Top each pepper with shredded mozzarella cheese;

10. Broil for 1-2 minutes, watching carefully. They are done when the cheese is melted

11. Let cool and enjoy!
