Roasted Carrots with Fresh Thyme
8 large carrots, peeled and cut into sticks or slices
4 large carrots, peeled and cut into sticks or slices, and 1 Purple sweet potato, peeled and cut into sticks
1/2 tsp brown sugar
3 tbsp olive oil
2-3 Sprigs of fresh thyme, removed from the stem
Dash of salt and pepper to taste
1. Preheat oven to 375 degrees F.
2. Toss all together ingredients together on a baking sheet;
3. Roast for 30 -35 minutes, tossing every 10 minutes;
4. Serve immediately.
