Roasted Carrots with Fresh Thyme




Ingredients

8 large carrots, peeled and cut into sticks or slices

  • OR

  • 4 large carrots, peeled and cut into sticks or slices, and 1 Purple sweet potato, peeled and cut into sticks

  • 1/2 tsp brown sugar

  • 3 tbsp olive oil

  • 2-3 Sprigs of fresh thyme, removed from the stem

  • Dash of salt and pepper to taste











Instructions

1. Preheat oven to 375 degrees F.

2. Toss all together ingredients together on a baking sheet;









  • 3. Roast for 30 -35 minutes, tossing every 10 minutes;

  • 4. Serve immediately.
