Pumpkin!
Similar to other members of the squash family, pumpkin contains a meaty core, that is very nicely seeded, roasted, and whipped into batters for baked goods. Pumpkin goes exceptionally well with warm spices like cinnamon, nutmeg, cardamom, and clove.
The symbolism of fall and Halloween also helps to make it a fall staple. “Zucchini spice latte” just doesn’t have the same ring to it, now does it?
The fibrous strands of the pumpkin make wonderful soft and moist muffins. After doing a great deal of kitchen research (the tastiest kind!), here I present to you six of the best recipes for pumpkin muffins.

The thing I love about this recipe is that it has the flavor of a cream cheese frosting, but not the work. The cream cheese melts into the muffin as they bake. The texture is smooth and creamy throughout.

It is always a great find to come across a sugar free recipe that also tastes great.
These really do taste like mini pumpkin cakes, with a flavor that is reminiscent of pumpkin pie. I find the richness of these little treats such that I am only tempted to eat one.
